Grilled beef, dipped in sauce, set down on the rice once before it goes in your mouth. We turned that “one-bounce rice” into an onigiri — a Japanese rice ball.

ONE BOUND
At a Japanese yakiniku restaurant, you grill the meat yourself, dip it in sauce, and set it down on your rice once before eating. The sauce and fat it leaves on the rice are irresistible. Yakiniku lovers call this the “one bounce” (wan-baundo).
Our onigiri take the rice from step 3
and make it into a single rice ball.
“Hitohane” (ひとはね) is Japanese for “one bounce.”
OUR CRAFT
The magic of the one bounce comes down to the beef’s fat and sauce, and the rice that catches them. So we never compromise on any of the three.

BEEF
Yamato beef (Yamato-ushi) is a brand of wagyu from Nara Prefecture. We buy it from a butcher in Katsuragi, Nara, that opens only a few days a month. On those days, they set aside our loin and short rib, plus the round and belly we use for minced beef.

RICE
Our owner has made a career of examining, cooking, and choosing rice. It had to soak up sauce without falling apart, and stay sweet even when cool. That judgment led us to just one rice: Koshihikari from Minamiuonuma in Niigata, one of Japan’s most celebrated rice regions.

GRILL
We shape the rice into a small cylinder, wrap it in thinly sliced beef, and lay it seam-side down on the iron griddle. We roll it to sear every side, then glaze it with sauce at the end. Little by little, the fat and sauce soak into the outer layer of rice.
EAT IN / TAKE OUT
